The best part of the laborious process of changing all the strings is being able to clean/condition the wood, and make it shiny again. Does anyone have a particular product to recommend? I've been using a Gibson spray made for guitars, but perhaps there's something better out there.

Don't forget the inside. While re-doing the F. Seith, a "brush" was made from a 1 mm thick x 3 cm wide and 30 cm long piece of flexible poly vinyl material from an old advertising sign. To this was glued a thin piece of felt. The resultant tool was able to get underneath the interior support ribs to the edges of the instrument.

After this, a leaf blower was clamped to a workbench and, holding the string-less zither firmly, the interior was then blown out through the sound hole. The flying debris was surprising; one may want to wear a dust mask.
